Fifth year, and the central tower is now mostly carved out. The only things below, now, will be a meeting hall of some sort three levels below the dining area at what's presently the lowest level, and three levels below that on the map's very lowest level, the jail ( I might make that the other way round, if there's a noise issue ).
As you can see, I figured an acceptable way to construct the entrance. I suppose next up will either be constructing the fortress proper, which will encircle the central tower, or digging out the 30-or-so tile wide artificial chasm that'll surround the tower.
When all's done, I hope to be able to flood and drain the tower at will, as a last line of defence should the entrance be lost to a siege, without flooding the rest of the fortress.

I seem to recall that caravans get very confused if you have more than one trade depot.

None of mine have so far! It's probably because the two are in close proximity and accessed by basically the same route. Thus far, all merchants have gone directly to the eastern depot, without any dithering.
