Nothing really special. I forgot to record the actual process of damming the river. Channeling under the river and putting in the floodgates took very little time once I installed the unnecessary amount of pumps and dug the farm. If I were to do this on an open field, I would not worry about flooding.
As you can see there are two channels under the brook. Not only does this help create a small area building area but it also allows additions (without putting floor hatches in the initial design). For the second channel to be hooked up again add a second set of floodgates and open the first.

I assume you've already discovered an underground pool or an underground river, otherwise you won't be getting any sort of growth in that room down there.
You'll also need to clear away all of those rocks down there, since they'll prevent tower-caps from growing to full size.
