This is the fortress as it looks in 1055. The tree farm and trade depot tower are the two main additions.
These three hatches cover stairways down into the fortress proper. They're not linked to a lever, so dwarves can come and go as they please. Also, if trader wagons are around, they can drive over the hatches, whereas they can't drive over the stairs. (There's a path around the stairs, so I guess that doesn't really matter) - bluerobin427

It appears he mined all of the adamantine out. The cyan rock you're seeing is microcline.
