A dam inspired by the fort waterwall. Currently though I am figuring out how to stop the water pressure from pushing out all the water in the reservoir when I release the flood gates.

Ahh, I see now... if you want to control the flow of water from the floodgates you should install water pumps, these should block the pressure and flow of water horizontally, and then lift water out of a pit/channel just below.

By the way if anyone has any suggestions on what to do with all this power generated by the dam, I'm open to suggestions.

well, let me just say this:
Thank you. Someone else shares my desire to create massive engineering projects that really aren't necessary.
Right then... As for what to do?
Well I'm sure your vast fortress could use some inner canals/waterways/artificial waterfalls/water gardens. Pump the water from the base, all the way up and into the fortress.
