That's what the various collections of smoke are. Dwarves, wildlife, and tamed animals.
What's not shown (I probably should have grabbed that too) are a large party of migrants trapped on one of the higher levels, slowly thirsting to death.
On that note, turning a small mountain into a flat plain creates a lot of fortress wealth.
