You only need one log if you can find coal.
1 log = 1 fuel
1 coal + 1 fuel = 2 fuel
1 coal = 1 fuel (but must have 1 charcoal to start)
1 log + 4 coal = 5 fuel

1 fuel + 1 hematite = 1 iron
1 iron + 1 limestone + 1 fuel = 1 pig iron
1 pig iron + 1 limestone + 1 hematite + 1 fuel = 2 steel

I make sure that the only stockpiles that allow barrels are alcohol stockpiles. This solves that problem.

...also, why did a lack of alcohol prevent your dwarves from drinking from the cave river?
And couldn't you just cook the plants in the barrels?

Oh, the outdoor river. Yes, you can run channels across it when it is frozen.

A glacier counts as a giant frozen river.

There are two differences between herbalism and farming:
1. The yield is considerably less.
2. You don't need to prepare a farm.
Given that "preparing a farm" means "digging out a small area next to the river," herbalism is much better than farming.

Also, if you don't have very poorly done hauling, rotten masterpiece meals won't happen, and they give a large happiness boost (as much as a legendary dining room) to your dwarves. Alcohol has an invisible quality level that affects the happiness boost from drinking it, and it also is a +20 happiness thought. A legendary dining room+legendary meals+legendary drink=+60 happiness.
To compare, "was forced to eat a beloved creature to survive lately" is a -50 happiness thought, as is "had a miscarriage recently."

I count 155 total, including the "extras."

I guess you're right. If the resident gets the equivalent of one light gray wound per square, that's enough to easily kill it.

Would the traps even hurt megabeasts?
I've seen a movie of a colossus walk through a few ranks of weapon traps and get only a few light gray wounds.

I've always had a male metalsmith, and if a companion, a male one, so I'm assuming that the metalsmith has an assistant and hoping I'm right.

It seems to be wealth-related; if I make a lot of valuble stuff (which here could be only high quality meals and rock mugs), I usually get an assistant, but if I don't, I usually don't.
