Yay, this caek turned out fluffy! Finally! The success lay in the airiness of the egg mixture and the speed and folding of the flour into that mixture me thinks. I dumped all the flour in at the end and folded it about 10-15 times and it formed a thick mixture that I spread around in the pan. The shallow baking tray probably helped.
